These Grain Free Vegan Burgers are easy to make, high in protein and magnesium. They’re also gluten-free, grain free and fit a candida diet.

Health benefits of Magnesium

Magnesium is likely one of those minerals that you don’t think about too often. But, if you get muscle cramps or have anxiety, you may be deficient in magnesium. During pregnancy, I experienced an increase in muscle cramps. These would usually wake me up in the middle of the night in agony; not fun. One time I woke up with a cramp in each leg! Because of this, I started paying close attention to my magnesium intake and incorporating recipes like this one, along with taking Calm at night, which is a magnesium powder, and thankfully it helped.

Magnesium can also help with other things, too, like regulating blood sugar and blood pressure, preventing migraines and helping your body absorb calcium (think osteoporosis prevention). It’s also thought to play a critical role in brain function and mood. With low levels being linked to an increased risk of depression. Feeling blue? Maybe you need to increase your magnesium intake.

 

Magnesium Rich Vegan Burgers

Foods Rich in Magnesium:

Pumpkin seeds, which are at the base of this recipe, are one of the top foods highest in Magnesium! In addition to pumpkin seeds, other foods high in Magnesium are spinach, chard, dark chocolate 70 – 85% (pretty cool, huh!), black beans, quinoa, halibut, almonds, cashews, mackerel, avocado and salmon.

What I love most about these vegan burgers is how easily they’re made. Just throw everything into a food processor and let it do all the work. They also hold their shape incredibly well for a gluten-free, vegan “burger.” Serve these with my Healthy Baked Sweet Potatoes Fries and Homemade Sugar-Free Ketchup for a healthy and satisfying meal that the whole family can enjoy. They don’t need to know it fits a Candida Diet. 😉

Grain-Free Vegan Burgers for a Candida Diet

Vegan | Gluten-Free | Anti-Candida

Ingredients

  • 1 cup raw sunflower seeds soaking optional
  • 1 cup raw pumpkin seeds soaking optional
  • 1/3 cup sun dried tomatoes in olive oil
  • ¼ teaspoon sea salt
  • 1/3 cup grated carrot
  • 1 teaspoon chili powder
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon garlic powder
  • 3 Tablespoons olive oil

For serving:

  • 8 - 10 large lettuce leaves
  • 1 avocado sliced
  • 1 beef tomato sliced
  • 1/4 red onion thinly sliced

Instructions

  1. Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.
  2. Wash the seeds by placing them in a fine mesh strainer and rinsing under cool water. Add them to a food processor and process for several seconds. Add sun dried tomatoes allowing some of the oil to drip in as well and process again for several seconds. Scrape down the sides and add the remaining ingredients. Process until everything is well combined.

  3. Form batter into patties and place on your prepared baking sheet.

  4. Bake for about 15 - 20 minutes, or until they look golden brown.
  5. Serve on a large lettuce leaf with additional toppings such as slices of avocado, tomato and red onion. Enjoy!

  • I didn’t have super high hopes with these but they honestly turned out really tasty! I did have to cook mine a lot longer- about 35 minutes. Pairs well with teriyaki sauce or Mayo/mustard
