Preheat your oven to 300 degrees F. and line a baking sheet with parchment paper, set aside
Place the oats, cashews, coconut sugar and sea salt into a large mixing bowl and stir to combine.
In a small saucepan combine the maple syrup, coconut oil and vanilla extract. Heat over medium-low while stirring until the oil is melted.
Pour this mixture over the oat mixture and stir to combine everything together. Add the dried cherries (DO NOT ADD THE CHOCOLATE YET) and stir again.
Pour oat mixture onto your lined baking sheet and spread into an even layer. Bake for 8 minutes, remove pan from the oven and give it a quick stir and bake for another 8 - 10 minutes, or until golden brown.
Remove from the oven and let cool for about 15 minutes. Now add the chocolate chips and stir to combine. Place your baking sheet into a fridge or freezer to continue to cool completely before breaking into chunks.
Store leftover granola in a sealed airtight container in the fridge.
