Wash the seeds by placing them in a fine mesh strainer and rinsing under cool water. Add them to a food processor and process for several seconds. Add sun dried tomatoes allowing some of the oil to drip in as well and process again for several seconds. Scrape down the sides and add the remaining ingredients. Process until everything is well combined.
Form batter into patties and place on your prepared baking sheet.
Serve on a large lettuce leaf with additional toppings such as slices of avocado, tomato and red onion. Enjoy!
