Yeast Free, Paleo Dinner Rolls

  • 3/4 cup cassava flour
  • 1/2 cup tapioca flour or arrowroot
  • 6 Tablespoons coconut flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon sea salt scant
  • 1/2 teaspoon baking soda
  • 1/2 cup filtered water
  • 1/2 cup olive oil
  • 1 egg beaten
  • olive oil or coconut oil spray


  1. Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.
  2. In a medium sized mixing bowl combine the cassava flour, tapioca flour or arrowroot, coconut flour, xanthan gum, sea salt, and baking soda. Whisk to evenly combine and remove any lumps.
  3. In a separate smaller bowl combine the filtered water, olive oil and egg. Pour into the flour mixture and switching to a spatula to combine fully. The batter shouldn’t be too wet or too dry and should not stick to your hands when rolling the dough into balls.
  4. Scoop 2 heaping tablespoons at a time and roll into a ball with your hands. Line on prepared baking sheet and lightly spray the tops with oil spray. Note: these will not spread out when baked.
  5. Bake for 20 - 25 minutes or until golden brown. Remove from oven and allow to cool slightly before enjoying!
