2large zucchinispirilized (I like this Spirilizer over on Amazon)
1/4cupsun dried tomatoesin olive oil
1/4cupchopped black olives
2scallionsminced
Juice of 1 lemon
1/8 - 1/4teaspoonsea salt
Instructions
Wash your zucchini using a vegetable brush (i like this one) and prepare them into noodles using your spirilizer. Place in a large mixing bowl.
Add your sun-dried tomatoes allowing oil to drizzle in as well, olives, scallions, lemon juice and sea salt. Using your hands mix everything together, allowing the oil to spread and everything to combine evenly.
Taste for seasoning and add more sea salt if necessary.
Serve and enjoy!
