Light & Bright Zucchini Noodles | Anti Candida

Light & Bright Zucchini Noodles | Anti Candida

There’s something about noodles that are so fun to eat.  Am I right?  Remember that scene from Lady and The Tramp with that long piece of spaghetti…it reminds you to not take life so darn seriously.

Now, what if you could turn a vegetable into a noodle? ….head exploded!!

Anti Candida Zucchini Noodles

I bought this spirilizer years ago, and have been getting so much use out of it lately for my clients on Candida and Paleo diets.  It’s a super cool kitchen gadget to have on hand, and you can buy them at a reasonable price on Amazon!  The one I have is the 5 Blade Spiralizer.  It’s light and easy to use and has several different inserts to make different sized noodles and other fun shapes.  Just look at these zucchini noodles…

For this dish I used several large zucchini which I received in my latest delivery from Milk and Eggs Grocery Delivery service.  They service Los Angeles and Orange County and I highly recommend you giving them a try.

I added

sun-dried tomatoes (that were seasoned in olive oil),
black olives,
green onions, and
lemon juice

to give this Anti Candida Zucchini Noodles dish a whole lotta flavor with very little prep work 🙂

Zucchini NoodlesThis recipe is super easy to prepare, you just add everything into your mixing bowl.

Servings 2

  • 2 large zucchini spirilized (I like this Spirilizer over on Amazon)
  • 1/4 cup sun dried tomatoes in olive oil
  • 1/4 cup chopped black olives
  • 2 scallions minced
  • Juice of 1 lemon
  • 1/8 - 1/4 teaspoon sea salt

  1. Wash your zucchini using a vegetable brush (i like this one) and prepare them into noodles using your spirilizer.  Place in a large mixing bowl.
  2. Add your sun-dried tomatoes allowing oil to drizzle in as well, olives, scallions, lemon juice and sea salt.  Using your hands mix everything together, allowing the oil to spread and everything to combine evenly.
  3. Taste for seasoning and add more sea salt if necessary.
  4. Serve and enjoy!

Recipe Notes

*This dish can be served topped with grilled chicken, salmon, shrimp or pan fried tofu!
