When I cut dairy from my diet more than 12 years ago I relied on soy for all my dairy needs. Soy milk, soy creamer, soy cheese, soy ice cream…and on and on and on. And although I reaped all the benefits of eliminating dairy (less stomach bloat, weight loss, clearer skin and of course all my eczema vanishing FOR GOOD), soy consumed in such high quantities isn’t great for your either.
Soy Gone Wrong
Over the last 3 – 4 years I started noticing a slight allergic reaction to soy. Initially, my mouth would get itchy when enjoying my soy milk lattes from Coffee Bean or Starbucks. Then one night as I was enjoying soy-based vegan ice cream with girlfriends, my throat started feeling like it was closing up. Finally, while I was cooking for a macrobiotic client of mine, I developed an immediate, intense migraine headache after taste testing a tempeh (soy-based) dish I had prepared for her.
That was the final straw, I realized that I had developed a full-blown allergy to soy.
Pesticides?
Soy is one of the most heavily GMO’d foods at about 99% being genetically modified.  It has one of the highest percentages of contamination by pesticides of any other food. That’s pretty alarming.
Easy Vegan and Sugar Free Creamer
Sadly soy creamer seems to be the richest and creamiest when compared to almond or coconut based creamers. So left without using soy and also wanting to avoid refined sugar, finding a good creamer that got my coffee to the dreamy, creamy perfection I enjoy was becoming too good to be true.
That is until now. This creamer is easy to make, uses only 2 ingredients and is thick and creamy!! It’s also free of soy and refined sugar, which is virtually impossible to find in stores. I add a couple drops of liquid stevia for sweetness, but any liquid sweetener will work.

Easy Vegan and Sugar-Free Creamer
Ingredients
- 3/4 cup coconut or almond milk unsweetened, from carton
- 1/2 cup full fat coconut cream* solid form
- pinch sea salt
- Extras: liquid stevia agave nectar, vanilla or peppermint extract
Instructions

place the coconut milk and solid coconut cream in a small saucepan with sea salt and any extras you are using.

whisk over low heat until fully combined and in liquid form.

Pour into a glass container and chill until ready to use.
Recipe Notes
*I do not believe that Trader Joe's coconut cream will work for this recipe. Their new formula is too watery.
If coconut cream is in liquid form, place in the fridge for about 1 hour first.Â
